Cherry coconut macaroons dipped in dark chocolate


This is an easy recipe for cherry coconut macaroons. They taste great and can be made in 15 - 20 minutes so are very fast. It is a perfect recipe for trying with children. The finished macroons are moist and tasty - great with a coffee. You an dip in chocolate or eat them as they come - white or milk chocolate would also be nice but the dark is good to balance the flavours. They remind me of Cherry Ripe bars from Australia or a cherry version of a bounty bar from the UK. Let me know if you try them.

Ingredients for recipe in the video for 6 macaroons


3 1/2 oz Baker's coconut

2 oz sugar

1 tablespoon flour

pinch salt

1 egg white

1/2 teaspoon almond extract

2oz chopped glace cherries

80g dark chocolate melted

few drops - pink or red food colouring (optional)


Ingredients for 12 macaroons


7oz Baker's coconut 1/3 cup

sugar 2 tablespoons flour

pinch salt

2 egg whites

1 teaspoon almond extract

4 oz chopped glace cherries

160g dark chocolate melted

few drops - pink or red food colouring (optional)


Bake for 20 - 25 minutes at 160 C / 325 F or until golden brown on the edges

They are enjoyed all over Scotland and the UK. They are often served cold or warmed in the toaster with butter or butter and jam but as with all pancakes, they are great served with your choice of topping.
